Mushroom Cheesesteak
A savory mushroom spin on the classic cheesesteak sandwich.

- 2 Amoroso's rolls
- 3 large portobello mushrooms
- 1 white or Vidalia onion
- 6–8 slices Cooper Cheese
- Neutral oil (canola, avocado, or vegetable oil)
- Salt and pepper to taste
Method
MUSHROOMS – TWO PREP OPTIONS
Steam Method (preferred for tender texture)
- Steam whole portobello caps until softened.
- Let cool slightly.
- Slice thin.
Fry Method
- Slice mushrooms thin first.
- Fry in neutral oil until browned and tender.
1. Caramelize the onions
- Slice onion into 1/4-inch half moons.
- Heat neutral oil in a skillet over medium-low heat.
- Add onions with a pinch of salt.
- Cook slowly, stirring occasionally, until deeply golden and caramelized.
2. Cook mushrooms
- Add prepared mushrooms to the pan.
- Season with salt and pepper.
- Cook until tender and slightly browned.
3. Melt the cheese
- Layer Cooper Sharp cheese directly over the mushrooms and onions.
- Let it begin melting.
- Toss and mix everything together once the cheese softens.
4. Toast the rolls
- Toast the Amoroso rolls until lightly crisp outside but still soft inside.
5. Assemble
- Load the hot mushroom-cheese mixture into the toasted rolls.
- Serve immediately.
