The Basics of Growing
From compost to harvest, see how fresh mushrooms are grown with care and precision.
We start our growing process by creating a fully organic compost from agricultural products in a semi-enclosed system, providing our five farms with a nutritious substrate on which to grow our mushroom crops.
Step 1
We carefully choose agricultural waste and by-products (such as corn cobs, hay, and cocoa shells) to prepare our mushroom-growing substrate.
Step 2
The right temperature and moisture levels help the natural breakdown of the materials, creating compost that is rich in nutrients.
Step 3
Mushroom spawn is added to the substrate, and the mycelium (mushroom root structure) is allowed to colonize it.
Step 4
Mushrooms are grown in beds, inside a controlled environment free from pests, sunlight, and temperature shifts.
Step 5
Mushrooms are fast! Just a few days after small “pins” form, they expand to full size and are ready to harvest.
Step 6
Our mushrooms are hand-picked with care, then packed and sent to supermarkets.
Step 7
A portion of our mushrooms is processed and packed into cans or jars so they can be enjoyed anywhere, anytime.
Fresh, jarred, dried, pulled, or blended—mushrooms are healthy and tasty in every form.
Our composting operations are built on the best practices established by the Department of Environmental Protection, and follow stringent environmental management practices developed in conjunction with the Berks County Conservation District.
Giorgi Mushroom Co. uses high-quality ingredients and stringent sanitation controls, ensuring premium quality products and preventing fresh food from going to waste.
Our mushrooms are hand-picked and packed directly into their tills to minimize bruising and reduce the need for intermediate packaging material. Local skilled labor forces assist Giorgi in ensuring the food security of the region by helping us harvest and pack this highly nutritious food.
Our facilities source 100% emissions-free electricity, and have established waste and water management systems to recycle and reuse materials. For example, the parts of the mushrooms that do not make the cut are recycled back into our compost.
